  • 2lbs Lamb, lean, cubed
  • 4 tbsp Butter
  • 1/4 cup Flour
  • 1/4 tsp Thyme
  • 1/4 tsp Ground Ginger
  • 1 1/2 tbsp Curry Powder
  • 1 cup Onion, chopped
  • 2 Garlic Cloves, minced
  • 4-5 oz Dried Apples, chopped
  • 2-3 cups Beef Stock
  • 1 tsp Lemon Rind
  • 1 1/2 cups Walnuts, chopped
  • 1/2 cup Raisins (soaked Madeira in wine)
  • 1/2 cup Coconut, shredded

DescriptionDescription  Enjoy!
InstructionsInstructions  Brown the meat in the butter in a skillet; sprinkle with flour, thyme, ginger and curry. Stir well and add the onion, garlic and apples. Cook and stir for 3 minutes. Gradually add two cups of the stock; cook and stir until slightly thickened and smooth. Add the lemon rind, salt and pepper. Cover and simmer for one hour, adding more stock if needed, until the meat is tender. Stir in the walnuts, raisins, soaking liquid and coconut. Simmer for 30 minutes to heat thoroughly.
NotesNotes  This is an unusual, flavourful buffet dish — very elegant with a rice ring. Serve with chutney, chopped hardboiled eggs and coconut.
