  • 2 Garlic cloves
  • 1 tsp Cinnamon
  • 2 tsp Coriander
  • 1 tsp Cumin
  • 1 tsp Ginger
  • 1/2 pt Vegetable Stock
  • 4 oz Dried Apricots
  • 1 oz Sultanas
  • 1 orange Orange Rind

DescriptionDescription  This recipe smells divine whilst cooking.
InstructionsInstructions  Heat 2 tablespoons of oil and saute the meat until brown. Remove it from the pan. Add the remaining oil, onion, garlic and saute for five minutes until soft. Stir in the cinnamon, coriander, cumin, ginger and stir for one or two minutes. Stir in the stock, add the meat, bring to the boil then cover and simmer for one hour. Add the apricots and sultanas and simmer for a further 1 1/2 hours (or oven cook with a lid on at gas mark 4 to keep more juice. Serve garnished with orange rind and, if desired, more coriander.
NotesNotes  Serve with cous cous or rice, and vegetables, or with jacket potatoes.
