Very easy and adaptable.
Instructions
Soak any stale bread you've got around in water overnight - in fact you can freeze ends of loaves until you've got several and then put them together. Next morning, put it in a colander and let the excess water drain out - you can leave it all morning and just stir it up occasionally. Then put it into a bowl, add an egg, a teaspoonful of mixed spice, sugar (any kind will do), dried fruit (any) and mixed peel. Stir it up well, put it in a well-greased pie dish and bake for about an hour at gas mark 3-4 (about 170°). It can be served hot with custard or left to cool and eaten like (sticky) cake.
Notes
You can make it in small foil dishes and freeze it and then cook it from frozen in a slightly hotter oven for an hour and a quarter. (Please don't be frustrated that these aren't exact quantities in the recipe - they don't matter and, if you want it sweet put in more sugar, if not, less. It always seems to work!)
