  • 1 tbsp Olive Oil
  • 1 Onion, finely chopped
  • 1 Red Chili, deseeded and chopped (optional)
  • 2 tsp Coriander
  • 2 tsp Cinnamon
  • 1 lb Butternut Squash, peeled, deseeded, chunked
  • 2 Sweet Potatoes, peeled, chunked
  • 3 pts Vegetable Stock
  • some Salt and Pepper

DescriptionDescription  Makes a large batch.
InstructionsInstructions  Heat the oil in a large pan. Fry the onions gently for 5 minutes to soften. Add the chili, coriander and cinnamon. Cook for a couple of minutes. Add the butternut squash and sweet potatoes, then pour in stock. Season with salt and pepper. Cover and simmer for 20 minutes until the vegetables are tender. Blend in batches in the processor or using a hand whisk until smooth. Warm through and serve.
NotesNotes  Freezes well.
