Instructions
Cream the sugar and the margarine, whisk in the eggs and fold in the flour. Plop a blob into 12 individual cake cases in a muffin tin and bake for about 15-20 minutes on gas mark 4 or 5 in the middle of the oven.
Notes
Variations include swapping 3/4 oz flour for cocoa powder for chocolate cakes, adding some cherry pieces and some almond flavouring or chocolate chips, or raisins and sultanas or flavour them orangey or lemony. You can also vary the icing, plain and white, chocolatey, orangey, lemony, almondy, or make butter icing, put a cherry on, make the icing blue or green or whatever. The variations are limited only by what you have in your cupboard. Freeze well.
